One reason that the Intel Virtualization Technology setting in the BIOS keeps disabling itself is because you probably have a dead CMOS battery. Dead CMOS batteries can also contribute to other settings changing on your motherboard.

After replacing the CMOS battery on my own motherboard, the issue was resolved.

The CMOS battery on motherboards is a standard CR2032 battery.
